I won big time brownie points at home with this recipe, yet another from
How to Cook Everything: The Basics by Mark Bittman. Butter cookies are my wife's favorite and these turned out well. I was a little worried they'd be too soft as they came out of the oven but they hardened as they cooled.
Sometimes there should just be a "like" button.

DeleteMy daughter used to make the most delicious shortbread in the world. Then, somehow, the recipe got "lost." I think she didn't want to bake them for me anymore. What a disappointing child (she's thirty and has a Ph.D. in math).

Did you know that Grinnell has the highest percentage of its graduates go on to get doctorates of any college in America? I think it's all those comfy chairs at the library.
DeleteOkay, just checked the stats on that claim, one the alumni mag used to trumpet. Grinnell's #7 for PhDs. But maybe if you include MDs and JDs? I know a lot of lawyers...
DeleteI'm not surprised by that statistic. All of my daughter's college friends continued their post-graduate educations, whether it was a Ph.D. or med school. She studied in the beautiful, brand-spanking-new science building every night. She and her boyfriend headed over there after they got off work and studied until 2 a.m. Being a Grinnellian is not an easy task, especially if one works in one of the few restaurants in town and is employed by the school as a mentor for mathematics classes. I'm very proud of her for paying for her own education--the part that wasn't covered by scholarships.

DeleteI also had the most wonderful sugar cookie recipe thin crispy crust on the outside but perfect soft on the inside. It and my Mum's recipe for pistachio, date or cherry cookie where lost in the fire.

Well, since I love butter cookies, you got my attention so I started hunting the recipe down. The closest I could find is Bittman's basic cookie dough recipe.
