I have wondered about the etymology. The word for the substance derives directly from the adjective but must a bitters be bitter in order to qualify? Or is it simply a matter of preparation? A bitters is technically an herbal infusion, though fruits and seeds can be used, too.
lemon bitters... seems somewhat oxymoronic...
